This tasty Italian potato salad is not only delicious but it's healthier than it's American counterpart (no mayo involved = guilt-free eating)... Make it a day ahead and it will taste twice as nice - enjoy!

Always discard any that have been out and exposed to daylight for extended periods to avoid unnecessary exposure to toxins.
Buy fresh ones from a reputable vendor, too.
This recipe serves 4.
Prepare your potatoes by washing and scrubbing them. Inspect them and make sure there is no green coloring. Discard any green ones or remove any green areas. Read why here.
Place them in a medium sized pot and fill until water just covers the potatoes. Turn the heat up and bring the water to a boil. When it is boiling, add the salt.
Allow the potatoes to boil for approximately 15 to 30 minutes depending on their size, or until a fork pushes through them easily.
When they are soft, drain the water and rinse with cold water to help cool them down faster. When they are cool to the touch, peel and dice them and place into your serving bowl.
Add the remaining ingredients, toss, chill for 2 hours minimum or overnight so that the flavors can meld, and then serve!
